| Butcher: Grazing the organic downs at Cholderton we have traditional breeds of animals that have been here since Victorian times. Hampshire Down sheep, once the most popular breed of the home counties is now very rare. Being relatively labour intensive, hardier continental breeds have ousted the Hampshire Down from its top spot. We have always found Hampshire Down lamb’s taste to be unparalleled and so willingly put in the extra effort. Aberdeen Angus cows fatten up on our organic leys producing superb beef. Hung in our cold stores and available oven ready or straight from the butcher you will not believe how tender and delicious it is. Our Organic Tamworth pigs also provide a superb raw material with which to cook. This delicious, nutty pork tastes like pork should and bears no similarity to intensively produced alternatives. Our pigs root through fields and roam around under hundred year old apple trees ensuring a deliciously lean and almost gamey meat. The butcher will be happy to prepare your joints for you exactly as you wish. So, while your shoulder of new season lamb is being boned and rolled perhaps you would like to sit down and enjoy a delicious cup of coffee and the day’s freshly baked pastry. |
